Materials

Four materials cover most of the line.

Carbon steel and iron. They season. They rust if you leave them wet. They do not need a chemical coating to release an egg once they have been used.

Oak. End-grain boards, oiled. Kind to a knife edge. They will cup if you soak them.

Stoneware. Local clay, oatmeal slip. Oven-safe. Not for the open flame.

Linen. European flax, heavy. Washes cold, hangs dry, gets better.
